    Make your weekend exciting: Try this ‘light yet satisfying dinner’

Treat yourself to a warm bowl of incredibly nutritious transparent soup made with fresh ingredients rather than stuffing your face with fast food. Subah Saraf, the co-founder of the Satvic Movement, has provided a must-try dish that is simple to prepare.

     

    “What tastes like a simple, soul-warming comfort? A bowl of wholesome clear soup, of course! 

     

    Our simple recipe here has been perfected after dozens of trials to give you that familiar taste of a nourishing clear soup, without a gazillion needless ingredients, and yet zero compromises on flavour,” shared Saraf.

     

    She further said that with no packed, processed ingredients, it is “100 per cent satvic”, informed Saraf who called the soup, a “light yet satisfying dinner”. “We’ve used no packed ingredients, no dairy products, and no fancy store-bought spice mixes. Now, you can simply chuck out those packets of soups full of preservatives and chemicals lying on your kitchen shelves,” she added.

    Ingredients:


     4 no - 5 cups of chopped lemongrass stalks 

    Water 1/2 cup 

    Small chopped carrot 1/2 cup 

    Small chopped potato 1/3 cup 

    Fresh corn kernels

    Lemon juice, 2 teaspoons

    1 1/2 teaspoons of rock salt 1 tablespoon of freshly chopped coriander leaves

    Black pepper powder, 1/4 teaspoon

     

    Here is the Method:


    · Place the chopped lemongrass stalks and five cups of water in a saucepan. On a medium burner, boil with the lid on for roughly 10 minutes.


    · Save this water, which is referred to as the stock, and discard the lemongrass stems after it has boiled.


    · Now add the vegetables to the stock and simmer for 20 minutes or so on medium heat, or until the vegetables are tender.


    · Cut the stove off. Add salt, coriander leaves, black pepper powder, lemon juice, and pepper, Mix well.


    · For two more minutes, cover the pot's lid to intensify the flavours.


    · You may now serve your scrumptious and healthy transparent soup.
